  • I've been eating Round Table (RT) pizza for over 40 years.  I grew up with it here in CA.  It's one the best pizzas in all of CA.  Their sauce is particularly good.  So, I developed a knockoff sauce that is very close to RT-red-sauce.

    This recipe will make about 3 large pizzas.  It can be expanded, of course to larger batches quite easily.
    I've tried many different brands of tomato paste, including 365 Organic from Whole Foods and I've come to the
    conclusion that any brand will work just fine.  It's rumored that RT uses Heinz, but it's not going to make any
    difference, based on my testing.

    No cooking necessary.  Just mix well and it's ready.  It does get better if left in the refrig. for a day.  Keeps in the
    fridge for weeks.
    I'm not using a full 11 herbs and spices here, but the end result is very close to RT red sauce.

    (RT-SAUCE Has to have a sweet, tomato-ey start, then a hint of
     fennel, and finally a peppery finish.)

        1 6-ounce can tomato paste (plus 1/2 can of water)
        1 teaspoon fennel seed (ground to a powder)
        1 teaspoon dried oregano (McCormick mediterranean)
        1/2 teaspoon garlic powder or granulated garlic
        1/2 teaspoon sea-salt
        1/2 teaspoon black pepper
        1/2 teaspoon red pepper flakes (ground to a powder)
        1/2 teaspoon paprika

    You're welcome Rocky!  I think you'll like it.  It's actually made the same way that RT makes their sauce.  They just take tomato paste, add water to thin it out a little bit, and then they add a dry spice packet and mix it up...

    When I developed this knockoff sauce, I actually had a tub of RT pizza sauce to work with...  You can get it free with an order of their bread sticks... They use it as a 'dipping sauce', but it's also used on their pizzas...

    I tried it and liked it very much for this laminated style of pizza.  I highly recommend other members try it!  :)
