How to choose the firewood for fireplaces, stoves and your pizza oven Pizza Party

What not to use: - avoid softwoods - avoid damp wood – pine – cardboard - covered wood - painted wood - lacquered wood - plastics

For a better combustion it is preferable to use firewood with less than 20% humidity. It is better to buy in advance and stack it in a dry and ventilated area, possibly not to the North. (Buying wood during the summer doesn't guarantee to buy dry firewood)

How to recognize the damp firewood : - quite heavy - has a few splits - the bark doesn't come off - sometimes has mushrooms or molds

Burning wet firewood : - makes smoke - pollutes - creates debris that settles in the chimney - produces less heat – you’ll spend more buying moist wood - harder to light the fire

How to recognize the dry firewood: - very often has some wide cracks - the bark tends to come off

The combustion of dry firewood reduces wood consumption and minimizes the smoke

To recognize if the wood is dry or moist, you can also throw down a stub, and if the noise of the impact on the ground is grim means it is damp wood

Types of firewood from ash oak beech are preferred because they have a good calorific

Tips:
1-buy the wood the previous year and use it on the next
2-stack your dry wood in a ventilated and covered place
3-buy an moisture meter for assessing the quality of the wood

The wood that you buy is almost always too wet! It must be purchased in advance
for short-term usage we recommend pellets

wood optimal size: length 30-40cm (11.82 - 15.76 inch) diameter lower 3-7cm (1.18 - 2.76 inch) or pellet for pizzeria

#3 How to use the door for fire management for your Pizza Party oven

Knowing the best use of the door is very important to reduce consumption, improve and simplify the management of the fire. The wooden handle helps  to not get  burnt . At the back of the door there are 2 pins to be able to manage this function:  During the cooking, it is possible to vary the opening of the door to increase or decrease the fire.


Important for outdoor placement:
when not using the pizza oven, the door and the chimney must be closed for protect it from the rain and snow.



the tradizional chimey has the valve for improves the cooking of food or it's possible buy stainless steel valve
There are dishes that require long cooking at a constant temperature without a flame for ex.  bread , roast and barbecue. So, to retain more heat and have a constant temperature, with  the standard chimney  close the lid. Instead, for those who have our built-in oven or those who have a very long chimney, the stainless steel valve must be inserted as you can see in the video. Closing  the chimney will keep the heat inside the oven constant improving greatly the cooking of foods.

In Pizza Party 70x70 you can cook 2 pizzas at a time, cooking pizza is very fast only 1 - 1m30s time cooking (depends by cooking temperature)
to simplify the management of the pizzas, i suggest:
1- bake a pizza at a time
2- use the Pizza Party's long pizza peel for "Pizza al Metro", easy to use look this video tutorial


our customers who use the pizza oven professionally, generally cook 1 pizza at time also with many guests

Because of its high importance, we have decided to include the thermometers in your pizza ovens's price. It has both the European and American scale. The thermometer must be placed according to where we want to make the fire. So if we make the fire on the right, the thermometer will go to the left and vice versa. If we place the fire to the back of the pizza oven then the position of the thermometer doesn't matter.

many times, considers that consumes only 3kg/h (6.6Lb)

we use beech or ash wood for cooking pizza because have an excellent caloric power
oak to make the coals for making barbecue in the pizza oven

Oak and Beech (Fagus?) have almost the same calorific value of about 4.2 kWh/kg.

yes, but the oak does much more coals, occupies more space

It's ideal for barbecue in the wood fired oven just because it makes a lot of embers, we have used many times to make the florentine steak

however, if you can find oak a great price, okay anyway

How to light the fire by gas

it's very fast and more simple ignition
look this video tutorial with the steps to prepare your wood fired oven for cook more pizzas

Important: open gas bottle away to the oven, and light the fire.

Use small pieces of wood or pellet for pizzeria

The first ignition: moderate heat about 200 °C (390 °F) for 1h30m, then gradually increase the temperature to dry the refractory bricks and tempering oven and tempering pizza oven

The high efficiency has allowed a reduction of the size, making it compact and convenient, maintaining all the qualities of a bigger wood fired oven. It takes only 20-30 minutes to reach the working temperature and is very economy because your consumption is 3 kg/h (6.5 lb./h)

Nice video. I use a paper towel saturated with left over bacon grease, then dried, as a fire starter. Recommended by a member here. I do attest to the ease in lighting a fire and keeping it going, almost a no brainer! :-D Good for me, ;D Ha!

It's very isolated and easy to move

in 2013 for celebrate the 15th anniversary of born Pizza Party 70x70 we have created new superlight aluminum support with or without large wheels


alternatively it's possible create a support artisanal, or embedded pizza oven in kitchen and taverns
