Gas buildup during bulk fermentation
« on: April 13, 2021, 10:03:10 PM »
I have had issues with the bulk dough spilling over the rim and through the sealed lid. Of course I could get a bigger bowl, but my question is this: Is it a bad thing to open the lid halfway through the bulk fermentation (total bulk = 36 hrs) to let some air escape? Not sure what, if anything, this may do to the final product. Also, these issues just started since I switched from a KA to the FAMAG Spiral mixer (love it!) If any other info needed...Neapolitan style, 2000g Super Nuvola, 66% Hydration, 3% salt, 0.075% CY ---> 61-2 F for 36hrs plus 7 in balls. Put in put in 7.7 liter round sterilite container.

You should not have a sealed lid, poke some holes in the lid.
I use a fermentation trap for my container, but that's overkill.

The trap is used in beer & wine, never seen it for pizza dough. You are an originator.

I believe most of the co2 stays in the dough, whereas in beer if you didn't have the outlet the fermentation chamber would blow a lid and make a big mess, which was a pain to clean when it happened to me once.

I didn't want to drill a bunch of small holes in the top of the containers, so I just drilled one big one.   ;D

If the dough spilled out of the box it's not a problem of box, but fermentation  :-X
