Reduce yeast for salt free pizza?

I know it's not ideal but I'm going to experiment with making a salt free dough for someone with kidney disease.

I normally use 0.2% IDY for a 3 day CF. Should I reduce it at all?

I've also heard that salt plays an important role in strengthening the gluten. Is there any way to compensate for this, maybe with extra kneading?

Omitting salt is likely to create several problems. You might want to take a look at the information on salt in the post at Reply 4 at:

For a quick answer, you might want to read the two King Arthur articles.

Without knowing more about your entire recipe or the type of pizza you want to make, it is hard to comment on the amount of yeast you are thinking of using. But the amount you mention in your post is in the range of IDY that can be used to make NY and other types of pizzas.

You should also keep in mind that salt usually is present in pizza sauces, pizza cheeses and meats like pepperoni. So, you may want to look for ingredients that are low in salt. You might even think about lowering the amount of salt in your dough to about 1%. But not omit it entirely.

So I tried reducing to 0.5% salt and it turned out great. Gluten was weaker but still manageable. I'm going to keep reducing to see how low I can go.
