Slightly off-topic.

Guy Fieri's Sauteed Sicilian Lamb.
With an Asian twist. I thin-sliced and velveted the lamb stew meat. So tender melts in your mouth! My Italian velveting marinate goes like this. For 1Lb. of meat, 1 heaping Tbs cornstarch, 1/4 tsp. backing soda, 1 Tbs white wine vinegar, and two Tbs olive oil. Smile...

Got to say, ive only ever done rack of lamb. Far from asian influence. But that dish reminds me of chinese pepper steak. I havent had it in ages, but it was delicious. I just prefer broccoli, or other vegetables.

This week's farm box meat share included "chipped beef" Never heard o it. Google said the ultra-thin slices are mostly used in steak sandwiches. I found the ultra-thin slices perfect candidates for the Asian tenderizing technique known as velveting.
I submit chipped Mongolian beef!

The last time I received this "cut" of beef in the farm share, I learned that chipped beef has some negative connotations for many who so selflessly served in our military. That being said, I submit, Asian velveted "shaved beef" with habanada peppers and baby yellow onions. All the players are from the Lancaster farm/NYU CSA box.

No military service here but we made SOS in Scouts. I think I was one of the few who liked it well.

fwiw, Cumin Lamb is one of my favorite chinese dishes.

I'm told by chinese ex-pats that lamb is currently the fashionable high-end meat in China.

The Chinese Cooking Demystified youtube channel has a video on it. They are usually pretty good. I also recommend "Made with Lau" though they don't currently have any lamb recipes up. Daddy Lau is a retired, china-born, chinese restaurant operator in the pacific north-west, and his son is preserving his recipes and techniques for posterity.
