  • So we're going upstate to an airbnb with family and I'm making lunch on one of the days so I'm thinking pizza!

If I parbake on Wednesday evening and refrigerate it, will it be good for dress and bake for lunch on Friday?

    Thanks

  • If you're asking about food saftey, yes it's safe.

Qulaity will be up to you, I've found 24-48 hour in fridge ok but not ideal. I've found freezing is best. The fridge makes it slightly stale compared to frozen.

    Good luck.

  • As soon as it cools freeze it. Even for only a day it tastes almost freshly baked.

Have you considered making dough Wed, refrigerating, taking it along unbaked on your trip, then baking fresh Friday?

    More quality than food safety.

Sounds like freezing is the way to go. It actually makes things easier to freeze it on the weekend before.

I have. But I need to make enough for 18 people so I was thinking at least 2 silicians. I might make a round pie while I'm there. Plus, I don't know the exact setup of the kitchen and what is there/not there.

I've got a month to figure it out.

    Thanks everyone.

  • Actually one more question, what's the best way to wrap the silician for freezing? Like a few layers of plastic wrap all around it?

Can get 16"x19" ziplock bags on amazon. Airtight and a lot simpler than wrapping in plastic wrap.

  • Sorry! One more question.

When do I take it out to defrost? If I want to make it on Friday for lunch (so probably around noon or 1pm), do I put in the fridge Thursday night and take it out Friday morning? Or just take it from the freezer Friday morning?

    Thanks again!

  • I'd take it out of the freezer to RT Friday morning. They defrost quickly.
