I tried it yesterday and though it was really good. Definitely the best retail packaged pepperoni I've tried.

585F for 5 minutes. Excited to get them into a hot oven.
I wonder if itís just sliced Rosa Grande.  How did you like it vs Vermont smoked pepperoni?
Things have never been more like today than they are right now.

I don't know. They are very different. I still prefer the Vermont Smoked I guess, but  I stopped using it a long time ago because I refuse to pay their stupid prices.

I thought they were pretty good. Looking forward to trying the Bold version when I find some.

That was the recipe straight from caputo and made with fiore glut. It's not the greatest for this application. The pepperoni were good though  ;D

Wasn't the whole point of dried sausages originally preservation - that they didn't have to be refrigerated for storage?

Must have been a year or so ago, I saw a big display of Hormel pepperoni in the store (not refrigerated).
Went to look at it to see if it was on sale, and there must have been at least 20% that had mold in the packages.
Not the best marketing plan...

Haven't bought any since.

However, I will have to look for the new one and give it a try.
I've always used Ezzo pepperoni and the 38mm cups nicely.
They have 51mm, but doesn't cup.

This Hormel brand will most likely be cheaper for me, since I pay to have the Ezzo shipped from Pennsylvania.

In grocery stores here, no brand of pepperoni is refrigerated. Never had a bad one yet.

I tried the Cup and Crisp Bold version and out of the pack it tasted like very smokey pepperoni.  However, baked on the pie it tasted like salami!  Didn't taste at all like pepperoni in my opinion but it did cup and crisp as advertised.  I won't be buying the Bold version again.  Have yet to try the regular Cup and Crisp.  The best DIY cupping roni I found in the grocery store years ago was Hormel "Rosa" sticks that I would slice with my meat slicer.  If you have a Wegmans in your area they also sell their own spicy cupping roni in their pizza section in plastic tubs but I found it to be VERY salty.

Yes. Itís just a hangup I have. Iíll buy and eat it, but refrigerate.

Sansone, the place Matt & I procure our "pizzeria only" goods, keeps the Roasa Grande in the walk in cooler. At least they do at the warehouse. The new retail spot they are in a open display cooler.
 Off topic a bit, I have come to the realization, I don't love the Rosa Grande pepperoni, not only is it to oily, but also to salty for my old (once cast iron) stomach. After I use up these last sticks, I think I have six in the freezer. I am going back to Boars head.

That's a good point. Before I do that I am going to try the microwave trick. I actually like the pizza cold, & no side effects.  Not sure why that is?

I couldn't find these locally for a while, but it may have just taken a little while to reach the West Coast since now they look to be pretty commonly available. My initial impressions are that the regular version is fairly bland compared to the Boar's Head sticks that I usually use, but since I have to cut those by hand, the Hormel scores a lot of points for convenience and consistency since my slice sizes tend to be all over the place. I'll have to try the Bold version next time and see how that compares, but it seems pretty promising.

They're in our Safeway. They're my favorite right now. A big upgrade from the regular Hormel or the Gallo.
(I haven't tried Boar's Head or Rosa Grande yet though...)
