The other great advantage for me is during the summer I take the mat outside (have a Blackstone) and put it onto a Keter Unity XL Portable Outdoor Table and Storage Cabinet (but any table will work if it fits. Big enough for the mat, sauce, cheese and peel. Don't have to worry about dirt or "stuff" since I'm stretching on the mat and building on the peel. When done, I just shake off the excess over the side of the deck and I'm done. No cleaning up.

I use an aluminum coupe tray to get the initial stretch started with some bench flour or semolina.  This keeps most of the mess nicely contained.  Even if the pan spins a bit, it doesn't matter.  https://www.webstaurantstore.com/images/products/main/25294/311166/12-aluminum-coupe-pizza-tray.jpg
