Royal catering spiral mixer, dough just sticks
« on: May 01, 2021, 10:39:47 AM »
Hi there.

Sorry for my english.

After a long waiting time, we went and got a spiral mixer.
We have been using it for some time but the dough just gets picked up with the hook and dont seems to get  kneading.
Are we doing something wrong or is the mixer just not Any good.

That mixer is going to work fine.   You are just not making a large enough batch for it to do the job it was designed to do.   Double that batch size and I think you will see a big difference in how it performs.

Dont feel bad, this is the most common mixing mistake I see on the forum. Someone buys a new mixer and doesnt understand why the dough isn't good, but they are not using the mixer for what its designed to do.   For the batch size I see in the video you will get a better dough by hand (probably the best dough actually).    I make large batches and bake bread, give dough away to neighbors and friends etc when I use a mixer, otherwise hand mixing is best.  Flour is cheap!
