Hello, pizza experts.
 For today's exercise, I want to make my sisters smile with the grandma pie of our youth. On the pizza nights, mom made a grandma pie with sauce and cheese, and one with olive oil fresh tomato, and anchovies pie. Today I make the anchovies pie. (just for fun)  I will be attempting a 7Hr. room temperature bulk ferment with a one-hour in pan proof. The formula will be the exact same as my last two 48hr cold ferment grandma pies I made. Let me get cracking and rev up the Bosch. I will catch you all on the flip side! The photo is for attention. Formula note: actual dough ball weight 625g.

The 1,250g of dough came out of the Bosch and was separated into one for tonight, (room temperature ferment) and one for 48hr. cold ferment. Looking like a peach!

This dough ball is not going to make a 6hr. bulk ferment. Time to start the pan-proof! Catch you on the rebound! Just about 5 hrs. of bulk. Now to pan-proof.

 This is definitely a riff on my mom's signature Nanny pie. It has a lot more going on.
