Nice batch of baguettes this morning. Done cleaned up and on the cooling rack. All before the sun came up! #HotbaguettesBoyintheCity

Those look good! The crumb in the last picture is excellent, imo. What time did you start this project?

Looking good. You're pretty close but the bottom loaf here is what to shoot for with scoring.

This seems like an appropriate time to disclose just how close I came to scoring hot dogs for the grill last week with a lame someone gave me.  :-D  Only a nearby very sharp knife and a sudden burst of self respect kept me from going through with it.

Thanks! I had the preferment ready since last weeks baguette bake. Mixed the dough about noon yesterday bulk fermented for a few hours. then at around 4pm I started the 12+ hour cold retard. At 8Pm yesterday I shaped the loafs then back to cold sleep. This morning I woke up 4AM fired up the oven with a a soaked towel in a pan for  for steam. I walked the dog came back scored three loaded and added even more steam (boiling water into hot broiler pan.)Then repeated for the other three. 1/2 way though the bake a remove steam sources and vent the oven.
