John Arena at Enoteca Pizzeria in San Jose

I'll be there on Saturday but they also have a seminar on Sunday as well.

I spoke with John Arena and he told me that it's a hands-on as well as demonstrative class on NY-style pizza, accompanied by its history and evolution plus wine and beer pairings.

What a great event yesterday. Well worth the drive down to San Jose to get to see a Master at work and share his knowledge.

I saw your pics on FB as well. Was a cool class. John's definitely the man. Loved his pizza history as well.

I had Sunday booked originally but then decided on Saturday.

Absolutely. All of a sudden an old co-worker and I were teaching half the class to ball dough and John was with the other half of the class. He is an treasure to our industry.

Same here. He had me showcase the way I make my pies, start to finish. Was a ton of fun.

I also had a nice chat with Steve, his assistant.

Steve was a really cool guy. It's fun to see young guys so excited about the business. We had the extra special treat of Rob Dinapoli being there to talk about tomatoes with us today. I'm always inspired by his enthusiasm and passion.

Would have loved to meet Rob but he wasn't available on Saturday. But John told us the story about how the tomatoes came to fruition.

I shoulda have kept Sunday on the schedule, dammit.  ;D

Btw, here's a real piece of histrory... literally.

This is a 132 yo piece of the stone that the first pies of Johnís of Bleecker were baked on. Their oven was built in 1885 and was utilzed by JoB when they first opened in 1929.
