Using a real mixer

I bought a 10 qt. Spar mixer at a restaurant auction a few weeks ago.  Despite vigorous bargaining with my wife I still have not procured permission to bring it into the house.  So for now it's in the garage, not an ideal situation but I decided to fire it up for the first time today.

What a difference in the dough!  The mechanical action on the dough with this mixer is so much better than with my KitchenAid and the dough came out smoother and better than I've ever made.   I realize now that I've never had properly kneaded dough.   The picture shows my result, 5 dough balls at 15 oz. each.

3 are in the fridge to use tomorrow, 2 are doing a faster rise on my counter.  I can't wait to use them!
