ok...so have printed up a recipe and am eager to try...salivating husband wants to buy me a mixer for Christmas (early gift perhaps) so I can begin the "Please Gods, let it taste like Uno's" process asap...

We are looking at an industrial size Kitchen Aid at Costco with dough hook etc for $249 with rebate...

Would be interested in any and all feedback...Thanks...

Steve

You really can't go wrong with a KitchenAid stand mixer. But, you don't need a mixer to make good pizza. There are many people who do all of their dough mixing/kneading by hand. A KitchenAid just makes the job a little easier.  :)

ok..husband wanted pizza bad and bought KitchenAid today..came home and tried recipe listed with picture of Mama at Uno's...we are here in Phoenix area at about 1500 ft elevation...our dough rose to twice the desired thickness..used part skim mozzarella but afterward wondered if whole milk might taste better...

Are the 6 in 1 tomatoes available in grocery stores or perhaps Italian deli-type grocery stores?  Have seen these suggested before and will order online if necessary...am a proponent of using as many organic ingredients as possible but for Uno type tasting pizza, am willing to make exceptions if necessary...willing to sell soul to devil if necessary...

Printed the recipe by DKM and thank you for the very specific instructions and pictures...Good job on putting the recipe together..Since we have a cartload of the pizza we made today leftover, will be at least a week before am willing to try again..(about 6 lbs of crust!!!)

The mixer is a luxury and it certainly made the doughwork easy...also whipped up a sour cream chocolate cake from a Nigela Lawson cookbook while waiting for pizza to bake so we are trying to get our $$ worth out of the mixer asap...
thanks again for help...

lorilou,

My daughter-in-law, who lives in Scottsdale, tells me that she found the 6-in-1s in one of the upscale markets in or near Scottsdale.  I think it may have been at AJ's Fine Foods.  You might want to give one of the AJ's a call to confirm.  In the meantime, I will send my daughter-in-law an email to ask her. Like everyone else who tries the 6-in-1s, she's a convert.

Thanks for the info..read all of the previous posts about tomatoes and also the effect of the origin of the water used after I sent my post so will be going to AJ's today as it is in the same parking lot as my weekly Trader Joe's stop...eager as well to become a convert!!!!

Regarding water, I did a brief stint as a waitress over 30 years ago (yikes) at a joint in Chicago Hts, IL called Alferno's..they had mastered the art of the Chgo deep dish pizza to perfection...Little did I know that I should be photographing the process and recording the recipe...Alas...Also there is a place called Louisa's at 14025 S Cicero Crestwood Il which also has mastered the recipe...Anytime I fly out of CHGO MIDWAY, I pick up their frozen pizzas and enjoy the smell of pizza all the way home...I am going to check and see if they have a website or if I can contact them directly and see if they will share any info...

Both of these locations would be using Lake Michigan water..In the late 1970's, Lou Malnati's had a franchise in Flossmoor IL and at that time they did not have Chicago water but the pizza was wonderful...

POWER TO THE PIZZA PEOPLE!!!!!
