To make it easier to autolyse and rest dough in the Famag without it drying out. If you remove the bowl and cover it the dough, breaker bar and spiral dry. So this saves me from having to clean them twice.

Great idea.  Did the lid come with the mixer or did you buy it online ?

Sort of looks like the lid of a plastic bucket.

Hans, how are you liking the Famag mixer? I've sort of been eying the Häussler Alpha Mixer for larger batches of dough.

It's from this set. These are great, I use them just about every day.

I don't know how I lived without the Famag.

Dave, the Hauser looks to be a good and well made mixer. The only reason I did not consider it is because they don't have a breaker bar.

Thanks, Hans. I don't think I've heard anything negative on the Famag with the exception of some household electrical issues in a thread here.

The Famag does seem to be the mixer of choice. I saw the Häussler in a commissary rental kitchen about a year ago and liked it. I understand the concern over lack of breaker bar, but it seemed that the dough hook itself was a different design (a broader loop) and it was working really well with only about 5 lbs of dough. My research will continue.

Thanks again.

I had pre-purchased a new GFI but didn't need to install it, it's been fine. Good luck with the search, I spent about two years trying to decide which one to get. I think that the Sum6 may be marginally better but the tilt head sold me on the Famag. No regrets here at all.

Hans, thanks for posting that.  I did something similar with a silicone lid for Sous Vide, but hadn't thought about it for the Famag.
