What is the best italian flour for Detroit Style?

What would be the best flour to use for a 70-73% hydrater Deteoit Style pizzadough?
Would Caputo Nuvola work well?

Yes the caputo nuvolo super is the flour I would recommend for this style.  It gets nice browning without the need for malt and the protein is up where typical Detroit style protein levels would be so you should get sufficient lift.

Would it be ok to ad malt even if I use the Nuvola Super? Or would it get to airy? I do not use sugars in the dough.

It might brown too much.   I have done side by side comparisons of a typical malted American flour and nuvolo super.  They brown at the same level.   

How much browning you get is dependent on fermentation amount, oven temp, oven position, and the pan you use.  If you find that the pizzas are not dark enough on the bottom try the malt, but at first I would avoid it.
