Launching Peel for Pizza Party - Wood vs Metal
« on: May 18, 2022, 01:22:04 PM »
Hello,

I bought a 70x90 Pizza Party oven a few months ago, previously owned a Ooni and had a pretty good ol' short wooden launch peel which did its job very well, but is now a little short and maybe a bit to small in diameter for my taste. The door is 39cm wide, so a peel of about at least 30, better 32 - 38cm would be ideal as would like to have those huge Neapolitan pies.

Now the question is, if I should get a metal (aluminum, steel..) or wooden peel, I have always opted for wood due to my subjective feeling of less sticking however Im not very sure if it is really the case.
Also the question of perforation, which is usually only with metal peels, but can be done for wooden peels too yourself I guess with enough careful sanding.

Should you have any direct recommendation of a specific peel, feel free post the link or the manufacturer, I would appreciate it.

Thanks

I've always used a wooden peel for launching, a metal peel for retrieving, and a smaller metal peel for turning.
Since I don't live in Europe, I can't point you to any web sites as what I can get here, you probably can't get there.

Best of both, thin wood composite. https://www.epicureancs.com/product/pizza-peels/
I've been using mine for many years.

Cook's Illustrated rated those very poorly.

I'm perforated aluminum all the way.

PNW rates them very highly after more than a decade.
