Cooked or uncooked sauce for NY Style?

Iíve mainly been doing neapolitan style pizza, where the sauce is not cooked prior to the bake. With NY style, what is the consensus for best results - cooked or uncooked sauce?

You can do whatever you want, but I think the consensus is that uncooked sauce is the norm for NY style pizza. Slice joints, especially, are all about quick turnaround and production of their food. Doing a simmered sauce just doesn't fit the workflow.
If we're not questioning the reason for our existence, then what the hell are we doing here?!
