Grande cheese
« on: January 30, 2022, 08:42:38 PM »
Any advice on where to find Grande cheese (WMLM or East Coast Blend) online or in NYC? I've been trying to find it, but haven't had any luck.

Not in the city, but Sansone has it and a good selection of other ingredients (tomato, hard cheese, oregano).

Vern's Cheese in Wisconsin has been a reliable shipper of Grande for years, if delivery is your preference.

Ace Endico sells it, Brewster and Mt. Vernon not too far from you. Just got very lucky, went up there the other day and found several packages of the Moz, cheddar and provolone mix. Normally sold only by case but on occasion they break open a carton. What amazed me the most was that they were about $14 each. Normally I get East coast blend for about $24.

Best... Steve

when we lived in westchester, pizza shops were happy to sell a pound for $5. worth a try in nyc, tell them you’re a home pizza maker, maybe show them a photo or two.

Thank you to everyone for the advice! For what it's worth, I ended up going with Vern's this time. While all of the Grande cheese is listed as sold out on their website, I called the phone number that's listed and was able to place an order.

That's what I'm saying,,,, why not?  It's like, "relax Grande, it's just cheese,,,, make it easily accessible"  :P

why does any company have a b2b vs b2c strategy? agree, it is frustrating but grande is not essential for great pizza.

Grande is available in several stores here in Michigan.

Many pizza shops will sell it too.

When I buy my Grande WM Shredded 5lb bags from my local Cash and Carry Distributor.
I have to buy a Case but not a big deal since I have a Freezer in my garage.
I pay between $14 - $18 for a 5 Lb bag with 6 bags per case.
I have a few Cash and Carry stores in the Pa.,NJ and NY area that I go too.
I started making Pizza in 2011 when I bought my Blackstone outdoor pizza grill.
I started with Grande and will not use any other brands cause it makes no sense just to save a few dollars.....JT

when you thaw out a 5 lb bag, do you use it all at once or do you use what you need at that time then portion and refreeze the remainder? I portion out the bag and then freeze into individual baggies.

I don't thaw mine, just break apart the large chunks and vacuum seal in packets of the amount I want to put on the pizza. Then into freezer.
Just remove air up to the point before it starts to compress the cheese, you don't want to turn it into a cheese pancake.

I thaw a 5lb Frozen Bag of Grande and put it in a Sealable air tight Tupperware container.
Cheese is supposed to be good for 30 days .
Myself I make 2 Pizzas a week along with a Meatball Hero or Veal Hero and put Grande on Ravioli.
A 5Lb bag maybe will last 3 weeks soooo no reason to refreeze a bag.
I have been doing this for over 10 years and there is No taste difference after a few weeks.
I have No problem buying a case or 2 cases at a time since I have lots of room in my extra freezer
and the cheese still taste great when Unfrozed.....JT
