That's quite a setup...what do you have going on there?

Electric home oven with heating element on the bottom and a recalibrated thermostat. The pizza is baked on the bottom rack in a pan on Saltillo tiles and under pizza stones. 1.5 hour preheat. 5.5 minute bake.  Throughout the entire process the oven door is opened only twice. Once to insert, once to remove.
