We always cook Chinese all from scratch...Here we have hot n sour soup with pork shrimp dumplings in a chili sauce...so much fun

Those dumplings look amazing.

Thanks ... sometimes I velvet beef with broccoli and snow peas...interesting concept to tenderize meat

J Kenji Lopez Alt talks about velveting quite a bit, I should try it.

I've tried the velveting method many times, but it has been hit or miss for me which is frustrating. When it works out, it's fantastic...but fairly disgusting when the method turns to madness. I am not sure how I go wrong.

Fun times. So I signed up for a CSA farm share. One vegetable share, one meat share, and 1/2 of an egg share, (every other week.) Monday, I made candy cane beats and sauteed collard greens. Today I made,
Morning Dim Sum Purple daikon radish & Hakurei turnup pastry! (Hand pies)
Look at the layers!
Looking up recipes is going to be a blast!

Looks awesome, I love bright purple Chinese stuff. Purple cabbage makes for a cool alien looking dumpling too.

I made Chef Raymond's Kung Bao Chicken tonight, man, I gotta say, it doesn't look like much but it satisfied my craving big time!

That's weird.  I can't understand how it could wrong.  Any thoughts what's happening?

  >> whenI first started velveting, it was 30 min...now down to 10 and stir frequently and rinse well from there...may help and I use baking soda..

Had to make this again, got the dried chilis this time.  Pretty good.  Should have wiped the plate down for the pic though.

I donít know if this is authentic, but itís my daughterís favorite meal; egg roll in a bowl.  I make it on a flat top griddle, but it works well in a 12-inch skillet.

1 pound ground pork sausage or ground chicken or ground beef
6 cups coleslaw mix or shredded cabbage
4 cloves garlic, minced
1 tablespoon ginger, minced(or two cubes frozen ginger)
1 tablespoon soy sauce
1/4 cup (30 grams) chopped green onions
1 tablespoon sesame oil

Heat a large skillet over medium heat. Add the sausage and cook, stirring often to crumble, until cooked through. Do not drain.

Add the coleslaw mix, garlic, ginger, and soy sauce to the skillet with the sausage. Cook for 3-4 minutes or until cabbage has softened a bit.

Remove from the heat and top with the green onions and drizzle with sesame oil.
Serve immediately.
Things have never been more like today than they are right now.

We do the same on my discada. Wife's favorite serve with crispy eggs roll skins...

Last night's Orange Chicken served with Egg Drop Soup and Potstickes....ran outta soy so passed on the chili oil dipping sauce for potstickers ..Had tad much orange zest...otherwise pretty good.

Thrown together from ingredients on-hand - a cross between moo shu and banh cuon:

Steamed rice noodle crepe (rice flour and tapioca flour)
Shrimp
Chinese cabbage
Wood ear
Tiger lilly
shitake mushrooms
eggs
cilantro
scallions
hoi sin sauce

Thanks! It's a really good recipe and I prefer the breasts over the thighs! Yes, a wok would be good. Somebody posted something here a while back?? I don't think it was wok per se, but some kind of propane fired outdoor cooking disk.. ring any bells with anyone?
