What's in there?

A deep-dish cousin to quiche that's packed with Italian deli meats and cheeses like prosciutto, pepperoni, soppressata, mozzarella and provolone, this rich pie, also called Easter pie, is traditionally made on Good Friday and served on the holiday to celebrate the end of Lent.

Pizzagrana, yes with wheat and ricotta so there is cheese.  My Neapolitan Mother-in-Law called it Easter Pie or Pizzagaina or Pizza Gain.  Every family has their own recipe and names it according to their dialect from what I can figure out.

No matter what it is called it's delicious!!

It's an Earth food. They are called Swedish meatballs. It's a strange thing, but every sentient race has its own version of these Swedish meatballs! I suspect it's one of those great universal mysteries which will either never be explained, or which would drive you mad if you ever learned the truth.

Giant Green Pie (Torta Pascualina)
So, friends here we have another all-around success. I achieved the goal of using a whole lot of very nice green leafy vegetables. As a bonus, I now have another very cool pastry to use in my tool kit!
(Arugula, spinach, dandelion greens baby rainbow chard)
