Does age of canned tomatoes matter?

If you have a batch of tomatoes, fi. meant to be used as they are with some salt on an NP pie, does it matter on the taste or certain flavors how old they are?

Recently canned, 6 months, 12 months, # months?

In glass, safely done not much. In cans they can get tinny/metallic tasting in my experience!
