I use the PSTK pans and don't have much of an issue with sticking. If there is a small spot sticking, I just use the metal turner/spatula that you can see in the first photo on the first post, to pop it out. I never par-bake but I don't think that par-baking would make the cheese stick more. Maybe us a bit more Crisco on the sides of the pan?

I have not. I'm just making my first pie of the year tomorrow, an NP on the Blackstone.  I'll try the steel pan again soon and report back.
