How about a thread for us to share recipes/photos/ideas on pasta?

Here's a first submission, from a couple weeks ago. Basic, no nonsense tomato sauce made with lean ground chuck roast - kept intentionally on the "wet side".  Capellini pasta (Barilla brand), boiled for almost 2 minutes ( a very toothy al dente) before transferring to a glass baking container, covering with meat tomato sauce, topped with whole milk mozzarella, grated peccorino and EVOO before finishing in a preheated oven for 4 minutes (or until cheese browns). In my particular electric oven I'll keep both top and bottom heating elements on until the thermostat reaches 300 deg celsius, after which I'll turn off the bottom and keep the top heating element on.

This type of pasta dish, finished in the oven with a top layer of cheese, besides adding a sense of occasion, maintains heat wonderfully - just like a lasagne.  The browned cheese adds a nice rich dimension of flavor. Remember to keep the sauce a bit looser than you usually would - because the pasta will absorb some of the liquid while finishing in the oven. I should also add that this style of pasta dish is an excellent way to make the most of your pizza topping leftovers.

I haven't seen the thread before, so thanks for the link. Should I get the urge to make homemade pasta I know where to look for recipes. I make potato gnocchi a couple times a year, that's about it.

It doesn't get much simpler than this. Capellini al sugo di pomodoro. Seeded cherry tomatoes, blended then into a saucepan with sauteed garlic in EVOO and a bay leaf. Touch of balsamic vinegar and S&P. Sauce over capellini, fresh basil, a fresh cherry tomato, shaved peccorino and good nonfiltered EVOO.

Quick and simple pasta dinner tonight - using storebought spaghetti (La Molisana) and a homemade tomato meat sauce. Once the sauce and pasta were ready I laid down a layer of sauce in a glass baking dish, followed by spaghetti, ladled and spread sauce over, sprinkled with mozz and fresh basil and let it finish under the broiler for about 2 minutes. Spaghetti al forno!

It's been a long time since I've made homemade pasta. I'm slowly mustering up the courage to make pasta for ravioli. The search for a recipe begins...now!  ;)
