Canned Clams........Is There ANYTHING worth buying???
« on: September 30, 2017, 01:00:40 PM »
I was going to make a clam pie the other day and the store I was at had no clams so I bought Chicken Of The Sea canned clams......OMG, I put them in a baggy and froze them to add to the dogs food!!! So, rather than give the dogs more clams, is there any good canned clams out there that won't be a waste of time and money?!?!

When I just had dinner with Bill (Jersey Pie Boy) he mentioned that you can find good frozen clams in some Asian/Japanese grocery stores.

Are they frozen in the shell or frozen in their own liquor/juice?

The ones I get are out of shell, no liquid and flash frozen. ..I've added just a touch of clam juice sometimes..not much at all to keep crust from getting wet

The ones I got were frozen in liquid. I want to say they were 7.99/lb.

I've tried fresh, frozen, and canned clams on (Neapolitan) pizza. Just my $0.02, but I will never use anything but fresh. Anything else just makes me angry.

So Craig, do you do anything to them first or just put them on raw and they cook during the bake?

I have no problem with the Snow's/Bumblebee but they're minced or chopped.  I haven't used them on pizza,  only chowder or clam sauce.

I shuck them and put them on raw. The cook beautifully at Neapolitan time/temp.

Thanks Craig :)  I'll have to try that...how many do you tend to use on your Neapolitans? Have you also used them on another style, maybe in the New Haven direction?

I've only done them on NP. I use a dozen or so on a pie.

I grew up on Doxee canned clams, now on the west coast use Snows chopped all the time in chowder, on pizza and pasta.  My son loves clam and bacon pizza. Frozen clams are probably better. Don't want to even try or I may never go back to canned. In fact, lets just forget we had this conversation...
