L'osteria Pizza dough

Hey, here in Germany we have a frenchise who's called L'osteria. As far as i know they using 10kg flour, 2 cubes fresh yeast, R.T. water, oil and a little bit egg & milk. I even don't know the hydration. Any recipe ideas?
