Yeast Model3.1 chart.

When it is referring to fermentation hours is that the total fermentation time i.e.  RT Bulk rise =4hr  CT fermentation= 24hrs, bring back to room temp 4hrs = 32 Total or????

The RT and CT are used to estimate the amount of yeast. And IIRC, the warm up time between pulling the balls out of the refrigerator and the cook is not counted.
