As I was ordering here today I heard someone say my name, turned around and it was Scott Wiener! It was a nice surprise seeing him here!. It worked out perfect, Franco took us on a tour of the basement kitchen and talked a lot about pizza. Franco spoke highly of the pizza forum crew that was there recently. He was impressed with the level of knowledge everyone had.

We tried the round slice, pepperoni square, bruschetta square and the sausage mushroom square. They were all very, very good. I think my favorite was the sausage mushroom square. It was really flavorful.

The pies in the photos sat for about 20 minutes as we were BS'ing so they don't look as good as when they were served. We ended up spending almost two hours there. Definitely introduce yourself to Franco if you stop in. Just before we left one of his cooks gave us a garlic cheese roll hot out of the oven...omgsh it was great.

Thanks for posting - pies look fantastic and I'm glad you had a great time Hans - when I see the work the professionals do it is very humbling and at the same time very interesting.....

Thanks for the interesting review, Hans. It looks like a great place. Can you please tell me what kind of fuel they are burning in their ovens?

That garlic roll was so good when I tried it. Sounds like you had a great visit.

Foreplease- when we were there, we were told the oven is in its sweet spot at just under 600 degees.

great photos hans! I think we were all impressed with Franco's level of passion, I hope the pizza catches on with the kids at columbia. they have a good, not great slice shop around the corner called (you probably guessed it) Mamas.

my wife hasn't been yet, we're about a 5 minute walk, I'm thinking tomorrow...

Wasn't sure where to put this...There's a Wednesday sandwich special at Mama's Too. Just saw a photo of tomorrow's sandwich- soft shell crab Milanese. Looks really good to me.

Edited to fix softball typo into soft shell. I blame auto correct.
