Yes. I called KA this afternoon. The young man I spoke with confirmed that it was not malted. When I asked about the % protein, he was VERY embarrassed to say it was "proprietary" information, unlike all their other flours! He did not understand this and thought it was very silly. He claimed he and others had asked why they couldn't pass on the info. He was aware of GM and Bay City Milling's domestic 00 flours. At any rate he said "rumor" had it was about 11.7%. That sounds great and I be happy to try it is it wasn't so pricey when shipping is included.

Did you look at the pictures? Maybe the good folks at KA should spend more time working on their pizza skills and less time stroking each other about how much they should try to gouge their customers.

To bump an old thread, laugh if you want but some of us don't have access to 00 flour for cheaper. My options are Amazon, which I think is $80 for a 50lb bag right now, while a lot cheaper than this, not all of us want or need 55lbs. The other place around me has 2.2lb bags of Anna something or other and it's $6, so not much cheaper. I wish this flour was cheaper, but it's the only thing I can get locally. Tonight I bought a bag, it was on "sale" for $7.49 (laugh laugh) for a 3lb bag. Best I'm gonna do by far without driving half way across the state or ordering some ginormous bag online.

Agree 00 is overrated. Also for the Italian stuff wheat and flour is been shipped back and forth to the US so not great for our environment. If you can get some local reasonably priced 00 it’s nice to play around with it though. Btw it makes really nice „playdough“ for the kids, very smooth.

What could I buy at a regular store that would cook at 900f without burning to a crisp? I get other flours could be substituted, but are the ones you can find easily? I know the high gluten I have's a no go for a high temp bake, as are the other few flours I have. Come to think of it, when I got home and started making my dough last night, I noticed the bag says "Neopolitan style" on it, so this might not even be 00 flour lol. Maybe I should go Google this, as I was under the impression that for 900f bakes you should be using 00.

I remember Chau has used malted KAAP in his oven at 900f and said it’s fine up to 900. Once I open a new malted bag again I’ll try it out at 800-900f and see for myself.
Best/closest alternative to 00 is unmalted AP or BF IMO

BF works? I either need to try again or get a different brand. I have First Street and the few times I tried it for full temp bakes in my Koda it was a disaster.

I generally use unmalted AP.

I’ve been using a unmalted BF from Baystate milling Boulder organic with 13.2% protein, works great at 800-950f.

I take back what I said, it wasn't BF it was high gluten. I don't know the difference aside from HG has more protein, but whatever it was the pizzas would scorch before they would be fully cooked. This was a good while ago and I was pretty new to pizza making. So it's possible it was just my inexperience. Or whatever dough formula I was using back then was wrong. I'm out of flour so I'll go pick up a bag of First Street BF and see how it goes. I just looked it up, 3 25lg bags are $24 right now that would be awesome. I paid that for a 10lb bag of 00 shipped off Amazon lol

It was almost certainly a malted flour. Look for an AP or BF that isn't malted (no malted barley flour or enzymes listed in the ingredients).

Thank you for mentioning this, unfortunately Smart & Final's BF, High Gluten & AP are all malted. There goes me getting a 25/50lb bag locally for a good price. And I checked 3 grocery stores, everything BF/AP was either malted or has enzymes. Looks like I'm really going to have to dig deep to find a local source for sutiable Neo flour that's not $8 for a 3lb bag, doh lol.

Arrowhead Mills Organic All Purpose Unbleached. $5 lb at Walmart. $7 lb at Whole Foods.
Edit - $5 for 5 lb bag or $7 for 5 lb bag.

It was posted previously that Whole Foods bulk AP flour is not malted.

I still forget sometimes that Target has groceries, I saw Good & Gathering Organic AP in a 5lb bag for $4.29. The only ingredient on the label's Organic Wheat Flour.

Maybe It's just me having bad luck, but at 4 different stores I saw 6 different organic flours, and all were malted. This Target one was the 1st that didn't mention it. I'm assuming if it doesn't say so on the label it can't be malted. But that's just me assuming because I don't know much here.
I do know this is the 1st flour out of about 20 I've found in a 5-mile radius of my house that doesn't list malted or enzymes on the label.

Some time ago, I tried to aggregate all the places that I believed to sell organic flours, both mailed and unmalted. The unmalted ones can be seen at the bottom half of the post at Reply 4 at:

I know that several of the places sell at retail but there may be places that do not.

I'm sure somewhere there's some fancy worded organic pizza flour that's $5 a lb that hipsters will line up to buy. I bought a helmet for my electric scooter, one of their selling points is the "vegan leather chin strap" vegan leather? OH, they mean imitation leather. But vegan leather sounds like a luxury item and not the Pleather it is, so they can up the price.

If you have a shamrock or dawn food supply around they carry a lot of different flours malted/unmalted organic or not. You can get an account pretty easily at Dawn ( not needed with Shamrock) and they sell
you whatever you need.
I paid about $26.50 for a 50lbs of organic unmalted AP from
baystate milling at Dawn, a local non organic 00 flour from the same producer was somewhere around $32-35 at Shamrock I believe (could not get it through Dawn
)
The shelf life of a AP or 00 is pretty long so you have some time to go through it.
If one can get good organic flour and if it’s ok priced I don’t see a reason not to get it, less
Glyphosate might be good for you at the end of the day. And you might get a hipster sticker for free.

I used it last week, not sure what I did wrong but my crust didn't poof up much at all. And it was really dense. I used the Ooni app to get the amounts and weighed everything out like I normally do. The only thing I did differently was I left it in the fridge an extra day (4 instead of 3) Was also the 1st time I used the Roccbox I bought. The pizzas came out pretty tasty though. Price absolutely sucks, it would have to make magical otherworldly pizzas to be worth it. And now that I learned in this thread that unmalted AP will give me 00 like results I'm good until I find a place to get a 55# of Caputo for like $45.
I have half a bag left, was going to try a 2nd batch, but we have a bug problem here and when I opened the bag I noticed flour bugs or whatever the hell they are in it :( I might go get 1 more bag though because I am curious how a 2nd batch would come out with a little tweeking.

You could try to sieve out the insects and then freeze the flour for a week or two. This will get rid of most of the critters and freezing it will kill off any eventual eggs so that no new insects will hatch.
