Holy smokes this was good. House slice and upside down square.

Not burned; totally in the zone. Didnít see Franco there in the few minutes I waited outside, but Iíd bet $5 that the guy running the oven was still there from two years ago when I last visited. If thatís the case, no question as to why itís so dialed in.

Man, this was good.

give the vodka slice a try next time

Here's a square I had there a few years ago.  The line was crossed IMO.

I have had a lot of squares at mamas even darker than this.   The first two times I had this happen I thought the pizza was headed for the trash.  What Franco has taught me is that this is not actually a bad thing.   I dont taste any burned charcoal flavor even though typically with that amount of coloration I would taste it.  Im not sure if its his wetter dough, or maybe the fact that the darkening happens so quickly just at the last minute of the bake when it is pulled out of the pan and put on the deck.  Whatever it is.... I have had some really dark pizzas... even black, honestly...  and they taste awesome.  The texture is always incredible!

For me, that's still on the NON-burnt side (aside from the bottom right corner, though that may be due to the lighting); it is pushing the limits, however.  This ultimately boils down to personal taste/preference.
