Some Detroits I've been making!

Hey guys and girls!

I'd like to share some photos of Detroits I've been making this past week. Some are made with the Baking Steel 72-hour dough and the other is a 70% poolish dough. Unfortunately, no undercarriage or crumb shots but I've been really happy with how the cheese is caramelizing and holding up in the Lloyd 10x14 pan. Such a great toy.

If anyone has dough recipes they swear by for Detroit, please share! Experimenting almost every day with these so I will take all the feedback, advice, questions, etc. I can! Happy Monday!

What kind of cheese and procedure are you using to get such a nice crust?
