From Pizza Bible: Master dough with starter (poolish)
Poolish: .12g IDY, 47g cold water, 47g flour used in recipe.  Overnight (18hours) in 80F proofer
Master Dough: 64% water, .5% yeast, 2%, diastatic malt 2%, salt 2%, oil 1%, starter 20%

Are you using 00 flour? You need the IR gun and get your temps north of 750į-800į at least!!!

That pizza also has the look of a poolish that has fermented too far

Using Caputo 00 flour.

Regarding poolish fermenting too far, 18 hour overnight to make the poolish and then about 20hrs in the fridge.  It appeared more hydrated than what I normally see, but I didn't change the recipe.  Slightly flatter ball from fridge as well.

Anyone that owns these ovens. Do you recommend the black oven or stainless steel, and if so why?
I know the stainless will hold it look longer and a simple polish or buff will remove any stains or tarnish.

I've owned both stainless and black. The black looks cooler, but it really doesn't matter. There is a barely noticeable coating around the upper front panel which I assume is residue from vaporized grease particles escaping the chamber. I don't know if polish or oven cleaner would mar the finish, but for now I'll leave it alone.

You can polish stainless steel to a mirror finish, it just takes time and tools


If I get the stainless one I might do that out of boredom one day who knows what

So in terms of propane consumption, how does this compare to an Ooni Koda 16?

I think Iíve zeroed in on this as the logical replacement for my Ooni Fyra, but propane usage is my only other concern at this point.

Also does anyone know if this is a long term product? Iíd hate to be left in the cold if I wait to buy for 3 months and they end up no longer selling it.

Got a very prompt and helpful response from Carbon Kitchen support. I'm confident my issues will be resolved. Once they are, I'll post an update here. In the meantime, I'll continue tweaking. Expect a video next week on my next round of tweaks.

I am having the same issues with the oven as Bill is. Only problem that Bill did not report on is my bottom burner will only ignite by manually lighting it.
 I am willing to overlook these minor flaws, because the oven cooks really nice Neapolitan pizzas.
 One minute seems to be the fastest I can cook in this oven at full heat. Iím happy with that bake time.
 Had some dough left over from the week end so made two pizzas. 45 minute pre heat and one minute bakes.

Were either of you able to fix the bottom burner not igniting using the knob?

It worked fine the very first time I tried it but since then I have had to ignite it manually...once erasing all the hairs on my arm   ;D

I almost ordered the Koda 16, but this oven seems to fit what i want to do better, however the price difference is hard to swallow.
