Malted flour in a higher heat oven

Hi guys,
Sorry Iím still pretty new in the pizza making home business.
I just got my ZioCiro oven that goes up to 1000f.
Question is what is the upper temp limit where you can use malted flour or NY style recipes.
Probably Iíll try to mix flours as well to try out (malted/unmalted)
My wife doesnít like Neapolitan so I need to cook at lower temps at some times.
Actually new Haven style looks great so wonder if I can get the same charr using malted flour at 700-800f?

I started my NP quest in a BBQ mod that ran ~775F on the deck. Pies were ~2:15. My favorite flour for this temp was KAAP.

Some of the best NP-ish pizza I've ever eaten was at Franny's, and the used Sir Galahad, a.k.a. KAAP.

Itís 28$ for the AP and 33$ for the high gluten flour, so not too bad. I think the KA I it about 22$ usually for me. Have you tried the Bay State milling organic flours or why do you think it is not worth it?

Upper limit on temp for malted flours is around 900f.   I've had success using AP and a low protein BF at those temps.  HG seems to require less heat.  Plus 1 for KA Sir Galahad AP flour.  I've been getting some nice pies in the Carbon oven.  70s bake.

Ja, thatís good to know. I donít mind some
charr, thatís probably what you will get at 900 using malted flour I assume.
I think im gonna also try to mix some of the flours,  malted and unmalted, to see what kind of blend goes well with what temp.
Also I am getting some type 1/ t65 stuff, curious how this will behave making dough, baking pizza/baguettes etc.

My bad. Misread the post. KASG is AP flour.

Great looking pies!  I guess Iím gonna throw in some malted pies in the ZioCiro and check out what happens. The high temp baking at 950 already stresses me out anyways

Start low and work your way up.  I can get a 50lb bag of the KASG for $22 and the Caputo Pizzeria for $45 here.   The KASG is not only half the price but imo a much better flour.

I agree chau.... KA is better.  I Just bought my first bag of caputo pizzeria in a few years and it was a let down.

KASG (Sir Galahad)= KAAP
KASP (Special Patent) = KABF

Wow- 100lbs of flourÖ. Thatís a lot to go through at home!

I just got 200lbs of new flour. Usually it takes me 2-3 month to go through this, but I also make bread,bagels baguettes with it.
