Looking at the $45 proofing boxes on webstaurant make me shudder. I could justify several hundred for an oven, but for what amounts to a plastic box? I absolutely can not justify buying 2-4 of those for proofing.
Are there any alternatives or same-but-cheaper options anyone knows of?

I've found I don't like proofing boxes as much as I thought I would. Especially when stacking. They take too long to cool down (and warm up) so I've had dough balls blown out in the fridge when they're supposed to be cold fermenting. To solve this you have to 1) not stack them and 2) cover them with plastic wrap for the first several hours until the dough has cool downed (or warmed up). May as well just use a sheet pan that I already own.

Cheap plastic twist tie bags. About $0.02 each and no clean up required.

Bread bags work too. Amazon has them, but are about 11 cents each, They are good for loaves of bread too, DUH.
