  • I made mine yesterday. Let it sit out for about an hour and then into the fridge. Its been about 24hrs. I was planning on using it today but didn't get a chance. Will it be good after 48hrs or scrap it and do another?

  • I think the problem is yeast die back and increased acidity.
    You could still use it but use slightly less than the recipe and add a little idy, for example 0.35% for 6 hourb ferment.
