Title: What do vegetarians eat?

I get asked this all the time.   

Stir fried broccoli, cauli, mushroom and tofu on soba noodles, with a little sambal.

When my son chose to became a vegetarian at around 17, I made every effort to both accommodate his choice and embrace it. For almost a year and a half we completely changed our diets.  We only ate steak occasionally perhaps 4 times that year - when he was out. I am the family cook so I took it as a challenge to make what tasted good to me. It was really not that hard. Plus, it was a great excuse to buy a VitaMix, a Panini Grill, and other stuff to "learn" more about how to make veggies and legumes without making soup or mush.  In fact, aside for your body getting used to all the additional fiber, which is interesting, I generally felt better most of the time - though I recall craving animal protein probably because of my "habit."  What's more, with all the great sauces, and seasonings, you can make almost anything taste great.  I don't think I'd go permanently back to vegetarian - but I totally understand how it can be done and done well.  DylanDylan, as usual - you're stir fry is just as beautiful as your pizzas. Nicely done!

Great you supported your son's decision like that.  I decided similarly at 15 (a little over 20 years ago) and also had supportive parents which I appreciate to this day.  At the time I started cooking most of my own meals, which weren't spectacular by any stretch but I survived just fine.   I find that most people who have tried vegetarian meals have seen that the variety of what's possible is vast, but I still find myself encountering people who aren't sure what's left to eat once you take meat out of the equation.

So I thought I'd start a little thread to leave some photographic evidence that I don't go hungry :-)

Where's @steelplayer?   I'm sure he could chime in with some appetizing creations.

You're right about trying to be supportive. When my son started his "vegetarian" diet it initially consisted of candy and copious amounts of crackers and chips. I had the whole, "No son of mine is going to eat like that!!" moment and started making food.  I can't compete with you or SteelPlayer on the beauty of pics but I'm going to attach somethings that I thought was creative and tasted great.  It's completely made up. I mean, c'mon! How often do you find 30% spinach in a bulgar and legume homemade veggie burger?!  :-D  (modified to be a bean curd, legume, and mushroom burger (with some spinach) for round 2!


I like your thread. I'm glad you started it and I will post to it as I do love veggies (and am quite partial to prepackaged fried tofu too)

Since you got me thinking along the lines of eating more veg... You have changed tonights menu to Yellow "fridge crisper" Curry over jasmine rice.  Broccoli, Bell pepper, Carrots, Onion, Shallot, Ginger, & spinach, with just a few remnant mushrooms.  I also have some frozen okra I may add too.   Ah, the power of suggestion! ;D  However, tomorrow night (I'm sorry) it's carnitas and quacamole night :drool:

Sorry missed this - I'm at the other end of the country from Waiuku.  It's very near Auckland - our largest city, and a nice spot, but I've only passed through and haven't spent time there.   I may well head north again though after my time down south in Dunedin.

I don't think I could ever go vegetarian - I like meat.  I just eat whatever I want and don't worry about it.  It turns out I eat meat about twice a week, maybe 4 oz. total.

Thanks!  If you don't already have one... may I recommend a hamburger patty press. They sell them everywhere in the US perhaps there too. I tried to make them by hand but since they are so wet and can break easily until they start to cook - the press really helps maintain shape. You still have to be careful turning them - but it works much better.

Thanks!  They are just giant extra firm tofu squares. I saute them in garlic oil, soy sauce, and ginger plus some butter to help promote color.  They are really tasty!

I didn't think you were.  I was just trying to say that I eat vegetarian 90% of the time because it's what I like, not because it's a conscious choice.

I could never personally go vegetarian, but I do understand and respect people who do. After watching the documentary "Forks Over Knives" on Netflix, it makes you think about it in a different way. It's not a PETA sponsored documentary, but one linking poor health with eating meat. Really interesting flick, and it encouraged me to not get the shakes when I go meatless for a day.

Looks really good!   Now I'm hungry and it's only 8:08am.  There's a load of good South Australian Shiraz, haven't had the Yellow Tail for a while.

I was in the hospital for a colon resection that near killed me and was on I.V. TPN and lipids and could only have ice chips for 4-5 weeks. Does that count for being some kind of meat free vegan thingy?? :-D

ehh.......that was 12-14 something years ago, most of it pretty boring except for almost croaking off a few times. The staff thought I was nuts when I was cracking jokes while the events happened....well......I guess found out I was nuts. I would sit in bed unable to eat anything except ice chips and watch the cooking channels :-D

What's the spicy leaf mix? Is it just baby mixed greens or something more to it. Have you ever had young horseradish leaves in a salad mix or on a sandwich? It's awesome!! Your creation looks wonderful, I would hit that like a hammer, even without the crumbled bacon it screams for in my mind :-D!!

For example, there are so-called ovo-vegetarians who eat eggs, lacto-vegetarians who eat dairy products, and ovo-lacto vegetarians who eat both eggs and dairy products. There are also vegetarians who eat fish and other seafood. They are called pescetarians. This allows such vegetarians to get more protein in their diet. Otherwise, they have to rely more on protein sources such as legumes, soy products, nuts, and grains.

Personally I'm at the "fairly relaxed" end of the vegetarian spectrum, eating dairy and occasionally eggs. So that's ovo-lacto-vegetarian.    Probably 50% of my meals are vegan, but certainly I'm certainly not vegan.

Yeah the terminology does get into hair splitting but is basically helpful in the same way as categorising pizza.

I pretty much don't like meat, no clue why I like pepperoni?  I was ok until my dad would butcher the cow that had dried up (pass the Beulah), watch the chickens being beheaded and making bets on how far they would flop after and OMG, those poor rabbits.  I sort of got semi vege after that, but my mother was not a good cook, so it wasn't hard, I didn't enjoy chewing a mouthful of meat for 20 minutes.  Very strange land to inhabit. 
I saw a video this AM about the younger people in India.  A lot of them eat meat out at fast food restaurants,  most do not tell their parents?????

As one who has been a student of health, nutrition and wellness for many years, and attempting to make heads or tails out of reports and studies on these topics from the health and scientific communities, I can personally attest to the difficulty in selecting a diet that is the best for one. There are many reasons for this. Many studies are not based on human trials with controls. Rather, they might be based on meta-data or epidemiological data. And, in some cases, the only data to support a particular position or recommendation is based on animal data. A simple example of this is resveratrol, a component of grapes and wines (my favorite drink of choice, hence my interest) with perceived beneficial antioxidant and phytochemical benefits, whose efficacy has recently been challenged. And some trials may have been conducted with small samples or for short durations. I have also discovered that there is a lot of competition for recognition among the researchers in the health field, and in some cases there are no peer reviews and, in isolated cases, even fraud. The Internet publishes everything, the good, the bad and the ugly. (For a scholarly article on the above and other related matters, see http://www.plosmedicine.org/article/info:doi/10.1371/journal.pmed.0020124 (http://www.plosmedicine.org/article/info:doi/10.1371/journal.pmed.0020124).)

The net effect of all of the above is that one can expect a lot of swinging of the pendulum on medical and health and nutrition issues, with conflicting views and recommendations, and a lot of flip flopping or reversal of prior opinions, many of which have been cast in stone and their proponents, even highly respected ones like that American Heart Association, are very reluctant to change. I think we have all been "victims" of these flip flops at one time or another, even if those who promoted their results and recommendations had no intention or desire to harm anyone.

Note, in particular, the emphasis and discussions on calories and, especially, protein. All diets, whether vegan, vegetarian or ketogenic (more on this below), need protein. It is perhaps the most basic building block of human health. The basic issue is whether one supplements the protein with carbohydrates or fats/meats while staying within an acceptable total caloric range. What I also found interesting about this article is that the food industry reacts to concerns about health issues, such as sodium reduction, without even knowing if there is a legitimate need to do so. It seems that they buckle to every demand.

Another fascinating item on the above subject, and one that focuses on an anti-vegetarian diet (but also addresses vegetarianism), is an audio playback from a weekly public radio program called the Peoples Pharmacy. The Peoples Pharmacy is like a gadfly in that it tries to make sense of conflicting studies and reports in the fields of human health, nutrition and wellness. They have no ideological dogs in the hunt although these fields provide a nice living for the hosts of the programs (the Graedons).

The abovementioned program segment is called Flipping the Food Pyramid Upside-Down. The audio segment spends a lot of time discussing weight and obesity and diabetes/pre-diabetes health concerns (overweight and obesity are very often connected to or pre-cursors of diabetes and pre-diabetes), starting at about 8:00 in the audio segment, but the intent of the segment is broader than just those issues. But, clearly, the thesis of the recommended approach is the keeping of carbohydrates in the diet at very low levels, less than 20 grams a day, and relying on ketones as the source of energy and burning fat (hence its value to those seeking to lose weight). That means that such a diet would be high in fats and meats. Toward the end of the segment, there is even a discussion of how vegetarians might find a diet that is suitable for them. I have my doubts about the latter since a ketogenic diet for vegetarians would rule out many high glycemic vegetables (mentioned in the audio segment) and fruits (which were not specifically mentioned in the audio segment). By their nature, vegetarian diets tend to contain high levels of carbohydrates that supplement the protein in such diets. But, to be clear, it is possible for vegetarians to have a healthy diet without following the recommendations offered up in the audio segment, especially if they do not have glucose tolerance issues. 

The above audio segment also discusses the sodium flip flopping and other related issues that one might find of interest. One of the most interesting aspects of the segment is the skepticism of the hosts about the ketogenic diet, as evidenced by their many questions trying to understand that diet since it flies in the face of conventional knowledge.

I definitely view the conventional wisdom (food pyramid etc.) as often being counter-productive - itís very hard to swim against but really important to do so if the norm isnít actually factual.

The food health research field is super interesting. I do occasionally check out some findings, however Iíve taken a step back from closely following or responding to trends around this.  The conflicting conclusions, flip-flopping, and many vested interests mean itís a full time occupation to stay up with it, interpret it and weight it all up.  Not that I donít value the research, Iím extremely thankful that it is being done, but the assimilation of the science into applicable cohesive dietary wisdom is still lacking.  Attempting to follow an ideal ďbacked-by-researchĒ diet is a fairly chaotic prospect IMHO.  The dietary laws arenít emerging as far as I can see, itís just dietary wars for now.

I never suggest to anyone that a vegetarian diet is healthier (than a carnivorous one) - even though some will claim it is.   Mainly because I'm unconvinced that there is accepted scientific agreement that any particular diet is healthier.

For a current work project Iíve been researching ďfake meatĒ which is plant based protein made to look like and have a similar texture to real meat and chicken.  One company based in Southern California and funded by the Gates Foundation is called Beyond Meat.  Another guy in the Netherlands calls himself The Vegetarian Butcher. 
Personally, Iíve always eaten meat, poultry, fish - the works, and I always will.  And part of me wonders why a committed vegetarian would want to eat something that is trying to be beef or chicken, but this seems to be the new craze.
Two nights ago, as part of my research, I went to an Asian restaurant in Paris that is strictly vegetarian, but the menu lists chicken, beef, pork, fish, etc.  But it is all plant-based protein, made to look and taste like chicken, beef, pork, fish, etc.  Iíll attach a couple of pictures.  It looks like the real thing, it even has a texture close to the real thing.  And the flavor is neutral, like veal, so it takes on the flavor of the sauce and other elements of the dish.  Some are soy based, some are wheat gluten based, and some are pea protein based.  No animal products of any kind are in them.
This might be what vegetarians will eat in the future to get their protein.

It won't be long until we have "meat," chemically identical to meat from slaughtered animals, produced in a factory that never sees an animal pass through its doors. Will that be vegetarian or even vegan maybe?

The lab meat concept gets into some strange territory.  If it's grown from animal stem cells then as an animal byproduct (which I think you can call it) I'd not call it vegan.  But it may well pass the definition for being vegetarian... maybe there'll need to be a new substrata of vegetarians that eat synthetics.  It does prompt reconsideration of the terms.

For a current work project I’ve been researching “fake meat” which is plant based protein made to look like and have a similar texture to real meat and chicken.  One company based in Southern California and funded by the Gates Foundation is called Beyond Meat.  Another guy in the Netherlands calls himself The Vegetarian Butcher. 
Personally, I’ve always eaten meat, poultry, fish - the works, and I always will.  And part of me wonders why a committed vegetarian would want to eat something that is trying to be beef or chicken, but this seems to be the new craze.
Two nights ago, as part of my research, I went to an Asian restaurant in Paris that is strictly vegetarian, but the menu lists chicken, beef, pork, fish, etc.  But it is all plant-based protein, made to look and taste like chicken, beef, pork, fish, etc.  I’ll attach a couple of pictures.  It looks like the real thing, it even has a texture close to the real thing.  And the flavor is neutral, like veal, so it takes on the flavor of the sauce and other elements of the dish.  Some are soy based, some are wheat gluten based, and some are pea protein based.  No animal products of any kind are in them.
This might be what vegetarians will eat in the future to get their protein.

Seitan (wheat gluten based fake meat) has been around for a very long time, allegedly developed by Buddhist monks.  You're right there does seem to be a recent wave of popularity of these products though but it's an established industry, companies like Quorn for example have been around for about 30 years.    As to why a vegetarian would eat these products, the reasons vary.   The products are mostly convenience food - quick and simple to prepare, so that ticks the box for anyone new to vegetarianism, not inclined to cook a lot, young and inexperienced in the kitchen, or just busy.  I've been known to grab fake meat on occasioan when I'm completely out of time for cooking. I used to shop in a supermarket near a university and the students just grab the stuff I think because of its simplicity in the kitchen.   Another reason is for some (mostly new) vegetarians who still crave "meaty" food - this is the pale substitute, but if you want bacon... then facon will have to do.  Sort of like nicotine patches for someone quitting smoking.   And for me the reason is it's just another ingredient - to me it is its own thing, not a substitute for anything.  You can add it to a dish or base a dish around and I don't think any further than that.  Most fake meats contain a reasonable amount of protein (although often incomplete) so nutrition can be a factor.

Now that I think about it... the biggest meat craving I personally have is wanting to emulate Craig's pepperoni pizza... I might have to track down some fakeroni to do just that.

Nothing but carbohydrates, I know because I recently stopped being vegan after 2 years  ;)

Kale Dog!  Sorry missed your post back there.  A good point, it's a reality for vegans and vegetarians - it's very hard work to keep carbs low and still eat "normally".     Especially knowing that I'm going to be cooking pizza many weekends, I try to offset that by a few meals a few meals per week that have no grains/starches.

Vietnamese veggie rolls: Savoy cabbage,stick rice noodles, cilantro, red bell pepper, scallions, cucumber, basil, & carrot.  (+white shrimp for some )
It was my first time making them.  Getting the right moisture in the rice wrapper to let me wrap them tightly without splitting was a challenge.  I ended up wrapping them more loosley than I wanted to. This made them less appealing - but not less delicious.  Served with a peanut sir racha and hosin dip & a rice vinegar, fried garlic and black bean with soy sauce, toasted sesame seed and fresh bird chilis.

They look great Don, all the more so for a first effort!  The last couple of summers I've made rice paper rolls, every time it's a challenge but some aspects get easier after a while.  It's a lot of prep work but always worth it.

Our local Thai place makes a spring roll that looks just like yours, no shrimp or anything though. They're really good and the cilantro is borderline overwhelming but I love cilantro so it's ok. Nice work

I've taken to using a small blender.   My current parsley-heavy recipe is:

1 cup fresh parsley leaves - destemmed
1/2 tsp salt
1/2 bulb garlic
1/3 cup olive oil
2 tbsp (⅛ cup) water

Throw it all in the blender, process until you have a bright green emulsion.  Not 100% smooth - just to the point where emulsification occurs.  Put the sauce in a pan for a couple of minutes until it darkens, then stir through spaghetti.   Throw a generous amount of grated hard cheese over it and inhale the lot.

I've been reducing veggies saved in the freezer for stock for 20 hours now.  This will be something between ProvenÁal soup with a little Italian thrown in for good measure.  Oh, and I used yesterday's pizza dough to make 12" "rolls."   We'll check the crumb tomorrow - because (I'm breaking topic here) there are sausages intended for those rolls.  I love soup!  Tonight vegetarian - tomorrow, not so much.

mmmmmm the reduced stock sounds good.  I'm resorting to a lot of store-bought vege stock over winter here, I've almost forgotten what first-hand stock tastes like.    Good looking rolls, not that I do the fake meat too often but the occasional vege-dog isn't the worst thing you can eat.

I've been a vegetarian for 10-15 years now, and I can't say that I feel any better other than knowing that I'm not eating dead animals anymore. :)

My son who turns four in a couple of weeks is a vegetarian as well.
My wife and 1 year old are carnivorous.

My wife and I eat a lot of pizza.

I have never heard of Saag. I just looked it up online and I know I'd like it. Spinach and Mustard and other greens!  Do you use a secret recipe or is it something you could share.  You may not eat souffles but I wonder if you could comment on the texture. What is it like?  Thanks in advance!!

Ok saag recipe, or at least this is what I did this time...

1 onion, diced, into a saucepan with a serious dose of olive oil, add a heaped tablespoon or so of my home-ground mongrel curry spices (I think fenugreek, cumin, dried chili, turmeric, coriander seeds, maybe other stuff!) - fry until the onions are becoming translucent.

Then added just under a tin (about 300g) of blended tomatoes (in my case this is left over tomato sauce :-).  Add 1 cup of vegetable stock, and 1/2 tsp salt.  Lastly add one bag of spinach, roughly chopped.  My guess is this was about 500g of leaves.

Cover the saucepan, leave it on a low heat until the spinach wilts down.  Then blend with a stick blender until the desired texture is reached.  Continue to heat for at least 10 minutes after blending for the texture to gel.   I also threw in about 20g of butter at this stage for fun... although it stopped being vegan at this point.

That's about it I think.  As you can see it's a more than a bit loose, and probably not a great recipe if it was followed as written.  I think adding the tinned tomato isn't standard for saag, but I often have to use up tomato sauce after pizza making so in it goes, and it does good things for the texture and flavour.

That sounds perfect... I'm pretty sure a naan would cook nicely in the blackstone.

Re-reading that recipe it's my usual add-stuff-as-i-go approach so don't follow it to the letter, it will probably need adjustment for taste and texture, but the general idea is there.

Looks really good Jeff,  you've inspired me to whip up fried rice tonight.  There are some vegetarian equivalents of fish sauce, although I don't know if they're even close to a passable substitute as I've never (knowingly) had fish sauce.

Saweet. Tortillas are just so versatile. You can put anything in them....and if it's a wet, stew like concoction then jus roll and bake...enchiladas!  :D

Portabella mushrooms grilled like a steak make great tacos.

I use them to substitute hamburger buns, for my wife. She is on a Paleo diet. Lukely she makes a exception on my Pizza!

Best mushrooms I tasted are the ones grilled in Greece, with garlic herbs and lemon juice. They do reminders me of meat.

No, these were quick convenience burgers with pre-made patties.   I do often make patties though, they tend to be improvised but next time I make them I'll take note of what goes into them.

Honestly, I never normally do burgers two nights in a row, but I had an urge to redeem myself after last night's pre-made burger patties.  I had a little more time tonight so made them from scratch.

Don't ask me for the exact recipe - the quantities were improvised, but ingredients list was:
mushrooms
brazil nuts
onion
1 egg
breadcrumbs
soy sauce
yeast flakes
cumin
garlic powder
salt

And these can totally be made vegan. Omitting the egg you need to make sure there's enough liquid to make things work, and I'll usually add a bit of flour to help bind the mix.    The vegan patties will be more delicate and need more care when frying, but taste every bit as good.

Whole portabello, that's nature's burger patty right there.

Yeah many vegan patties are on the fragile side, but can be worked with.  Like an extra high hydration neapolitan dough, just requires a bit more care. And you might botch one or two while you learn, I know I certainly have ;)

Dylan if you get to writing down the amounts, please share. Those look fantastic! I love a good veggie burger and I haven't seen much better. Haven't had the greatest luck with making my own. Great Job :drool:

Hey jon - here's my guess - very rough and probably incorrect.  I'll note down the exact quantities next time I make them.  The good news is they are super easy to make - just chop the solid ingredients coarsely, throw the whole lot apart from the breadcrumbs in a blender and process until you have a workable texture.  Then mix in breadcrumbs by hand, little by little, until the texture and hydration seems right.  Then shape and pan fry.  The mix should be a bit wet but will be just manageable and hold together. Fry fairly low and slow, don't move them until they've set.

Makes four patties:

mushrooms - 6 very large button mushrooms (I would use any variety, these just happened to be in the fridge)
brazil nuts - 6x nuts
onion - 1/3
1 egg
soy sauce - 1 tbsp
yeast flakes - 1tsp
ground cumin - 1tsp
fine garlic powder - 1/2 tsp
salt - 1/2 tsp
flour - 1 tbsp
breadcrumbs - about 1/4 cup total, although I added them little by little until the hydration level seemed about right


As I look at this I bet the seasoning quantities are way out of balance - I always do that to taste, I'd suggest doing the same.

With Satay You refer to the peanutsauce?

In the Indo-Dutch kitchen there is "Sateh sauce" wich is used with the kebab like skewered meat roasterd over a grill.
My grandfather  used to marinate tempeh and made them into Vegetarian Sateh sticks.

The Sateh dish comes with a very simpel sauce, Peanuts grounded with spanish pepper in a Oelekan (mortar) ad sweet soysauce and lime juice.

For  several dishes there are different sauces, like the mild Gado Gado and spicy Petjill vegetable recipes

Vegan. The pie with the salad is just a marinara, the other pie is vegan sausage and cheese from some experimenting I was doing.

I break a few rules sometimes so I guess I'm not 100% vegan but I try to lean that way as it makes me feel a lot better.

In this case a cheap plastic "glass" from our picnic set that happened to look about right, greased with EVOO to aid release.  I often use glassware for molding rice, just about everything in my cabinet with a bit of a taper has been or will be filled with rice eventually.

I am not "knocking" vegan dishes, because i love vegetables and im sure a well balanced vegan dish could be "filling" My complaint is that alot of the "dishes" on this thread, and pretty much most ive seen online do not look filling with the lack of body/fat. And this could be vegetable oil to add that body/fat. So my question is why does bland/heathy low fat go hand in hand with vegan cuisine?

I can understand that a lot of veg/an dishes can look less than hearty, it's a fair comment.  Personally, I get through a bottle of olive oil as quickly as anyone, and have zero complaints about my meals not being filling, and blandness has thus far not been a complaint either.  Sometimes I go a little too far with the flavour if there's a valid complaint to be made.   I do hold back on the richer fats, using butter, ghee, cheese sparingly, although that's more to offset my regular pizza indulgence than stemming from my vegetarian bent.

If the food posted in this thread looks bland and unable to fill a stomach, I'm not sure I can convince you otherwise.  If you're ever in my neck of the woods (New Zealand) I'd love to prepare you a meal for a fair assessment.

Nice thread you have going here!! grew up vegetarian with lots of eggs (grandparents had thousands of chickens and sold the best eggs around) lots of milk and cheese too.....and real butter. So i guess its what you get used to. You need to know your nutrition, which my mom did.....she taught it. I had my first hamburger when i was in my early twenties. I get the pull.....nothing like the smell of grilling.
My sister gave me some vegan broth recipes. The soups i have been doing are steeped not boiled. I used to pick nettles in the woods for my moms nettle soup.....that was amazing....with Norwegian flat bread on the side. I haven't found a source for nettles yet so i have been using kale. it takes five min and all you need is a $29.00 electric tea kettle. Best of all its piping hot and gives you the feeling you are eating a cooked meal....not raw.

I wouldn't associate low fat with bland at all, and not to even go there, because nutritional bias and information is very debatable but you shouldn't be getting full from fat. High fat is more of a paleo thing... most vegans are trying to get out of ketosis. It's funny you mention low fat because most vegans I know avoid the gourmet vegan restaurants because of all the fat with the nuts and seeds and cold pressed oils. Vegan is a broad term, there are vegans that live on french fries; you mention you love vegetables but I eat mostly fruit. I'm in love with this lifestyle though; what an amazing platform to be creative with food.

Last time I checked, the eggs you get in the store are not fertilized and hence not a fetus. For that matter, it wouldn't be a fetus even if it was fertilized and fully formed in the shell. A fetus is nourished by it's mother while it develops and is born live.

BUT, for many vegetarians, and most ALL veagans, they come from a living protein animal, thus not part of their diet. I would think the unfertilized sperm or ova/ovum or gametes/germ cells from animals would NOT be considered vegetarian and certainly not vegan, though some in the vegetarian group make exceptions

Either uneducated, or make the exceptions and many are off and on again. If I had a known vegan or vegetarian coming for a meal I would tell them. Like feeding a Jewish or Muslim person pork or shellfish in a dish, I would not hide that from them

Yeah that's about as inconsistent as you can get.  I'd imagine these folk to be in the minority - the veg/ans I know are quite consistent with what they do/don't eat and are well-informed about ingredient lists.

Having said that, I can admit a related personal fault here.  One ingredient I try to keep out of my diet is gelatine.  I know full well that gelatine is in a bunch of foods, and I generally succeed in avoiding them.  However gelatine creeps into all sorts of places, and recently I've discovered that the most popular sour creams in New Zealand, which never used to contain gelatine, now do.  Some sour creams, generally the boutique-y ones, are still gelatine free.    Anyway, this is my current challenge, to not fall into buying "store bought stuff" that contains gelatine.  Increasingly hard to do effectively, unless you demand a full ingredient list...

I'm often just requesting vegan dishes when I'm eating out these days, especially if it's a new place.  Not because I'm vegan, which I'm not, but because it's just a simpler way of knowing what's on my plate.

Ahhhhh......that's crowded place, been there a few times.Professing the benifits or not, pro or cons is all over the place with herbavore and carnivore thing, people eat and believe what they want, just can't go with the "other one" is wrong in their beliefs nor do I want some pushing on my beliefs. It's just about respecting the other persons habits, no fingers, but I would be as informed as possible to a persons dietary or other needs if they were a guest or if I was cooking their food profesionally upon request. Lotssss of slippery places.........

Aside from vegan (personally think there crazy, especially raw vegan)
That is my main reason for not taking it serious when i vegetarian confronts me. (they do) sorry dont take offense. It seems like alot of people that go vegetarian like to make it well known how much better it is then people who choose to follow instinct.

I see raw vegan (living foods) as the most instinctual way of eating possible! I still like pizza though.

Not to nitpick, just inform, but Parmigiano Reggiano isn't vegetarian as it's made with cow rennet.
You can make a chia (or ground flax) egg for baking; 1 tbsp chia seed to 3 tbsp water, let sit for 10-15 minutes until the mucilage becomes "eggy"

There are also plenty of non-DOP Parmigiano Reggiano equivalents that don't use cow rennet.

I've dabbled in cheese making a handful of times over the years and have found it more difficult to find cow rennet than vegetable rennet unless purchased online. Seems like vegetable rennet is used as much if not more than the cow rennet, my experience anyway
