I知 so new...recipe please

Okay I知 not a noob to cooking but making good pizzas, yes. I am in need of a good dough recipe. I plan to cook on a kettle pizza serious eats Edition and maybe a BS - their shop is about 30 minutes from my house and offer some nice discounts. Anyway, I壇 like recipes for NY/Neapolatin style dough. Thanks!

There are lots of recipes and styles in the "Pizza Making" section of the forum. Just pick the style you are looking for and browse that section for a recipe that looks like something you want to try.

I'd recommend following something from the Dough Doctor.  This is a basic recipe that he puts out quite often:  https://www.pizzamaking.com/forum/index.php?topic=32184.msg318451#msg318451

So much of pizza making is dependent on the type of oven, fermentation temperature, technique in handling the dough and baking temp.  But this should be a good start. 

Give it a try and post some pictures with your results and what your thoughts were on the pizza.

The standard Lehmann dough is a great place to begin your pizza exploration.  Given your baking setup, I would start with King Arthur Bread Flour (or even their all-purpose flour).

Here's the formulation for a single 11-inch dough ball, yhough you can scale it for more if you desire:

Flour (100%):    151.36 g  |  5.34 oz | 0.33 lbs
Water (58%):    87.79 g  |  3.1 oz | 0.19 lbs
ADY (.2%):    0.3 g | 0.01 oz | 0 lbs | 0.08 tsp | 0.03 tbsp
Salt (2%):    3.03 g | 0.11 oz | 0.01 lbs | 0.63 tsp | 0.21 tbsp
Total (160.2%):   242.48 g | 8.55 oz | 0.53 lbs | TF = 0.09

Is there a particular style you like or prefer, thin, thick, crispy cracker crust, ny style......? Hard to pick one for you without a little direction. Even if it's Pizza Hut, Dominos, a pic of your favorite pizza joint pie even!

Varasano is a passionate person, like many of us here, but at the risk of sounding like some of the cranky New Yorkers on this site, he is incorrect about the use of sourdough at the old (and current) NYC pizzerias (they simply don't) and much of his directions are too precious and overly complicated. 

Just make a basic Lehmann dough.  Figure out what you liked or didn't like about the finished result and then make adjustments to your formula and/or bake. Keep it simple.
