I have made, on occasion, a pizza that resembles what you are looking for. For the sauce, I mixed equal parts hoisin sauce and plum sauce with a small amount of dark mushroom soy sauce and some Thai chili oil (dry bird chilies in sesame oil) in a bowl and spread on the dough. I used leftover roasted chicken from the night before cut into julienned strips that had been "rolled through" the aforementioned sauce, lightly) Cheese was 70% WMLM 30% PSLM. I added mandolin sliced zucchini and shitake mushrooms. (there was something else green on it - I can't recall - probably baby spinach) Finished with scissored purple Thai basil. The wife really liked it. Purely for the purpose of understanding what the crust tasted like - got some that had the sauce and cheese on it. It was not as sweet as CPK. There was a bit more heat - from the oil - but that was on purpose.
Cheers,
Don
Edit: It was not spinach... It was green onions - the green part cut in 3" segments and then lenghthwise as well.
