Starting a Pizzeria with low budget

Hello everyone, I am from Canada and i plan to start a pizza shop with a low budget. I have some years of experience or running a pizza store for someone else but quite a long way to go. I was going to use this as a journal to document my journey and bounce ideas.

My first purchase is going to be 2 used Lincoln conveyor gas oven. It an old oven and has been used in a pizza store for quite a few years now.  I am hoping to make the purchase in a few days now. I access to a mixer, because I am sharing space with a bakery and they will let me use theirs.

Sharing a mixer may be problematic if there is overlapping need.  Why not buy a used one so you don’t have to risk a conflict?

The person who owns the bakery wants to sell it off, so I am going to buy it convert the whole thing into a pizzeria. This worked out very well for me because there is a lot of equipment in there which I can use; including a single deck gas pizza oven!

I have experience working with conveyors and was setting up my sourdough detroit style dough to match it; Confused on if I should chuck the existing oven and get conveyor or just start learning how to use a deck oven.

That problem solved itself. I am taking over the bakery
