Some Tutorials on seasoning our Sicilian pans

I am going to post some videos as on how we get the pan ready for a full bake and remove the pies easily without scratching the seasoning and links to the tools to work with the pans. Par bake at least 3 dough's or until dough releases easily before making a full pie.  I would parbake at least 5 dough's and then top and bake before going with raw dough, toppings, and bake.  I am sure most know about all this but I figured it wouldn't hurt to post.  This is what we use to get oil and crud out of the pans.  A cool scraper for sure.

I wanted to share with everyone who bought a pan from us to par bake 3-4 dough balls before making a complete pie. Don't forget to oil the pan and inside sides of pan as well.  It will help things not stick when you get the full pie going.

I was curious to what a pie would come out like in our home oven.  We sold the pizzeria so now if I want pizza, I have to use it.  This is my first attempt baking a pizza in our oven.   I baked this one in one shot, no par baking the crust, on the oven floor at 500 degrees.  I was surprised how good it came out.
