I am so lucky to have a stack of vintage Frank Mastro designed Blodgett 1000 ovens. They are original and never let me down. The pies do not need rotating during the bake. Younger pizza makers do not believe this because even the new state of the art pizza masters need rotating. I was also fortunate to become friends with Frank Mastro's daughter Madeline who sadly passed away a couple years ago in her 90's. She told me when he finished the 1000 design, he said it was perfection and would never make another oven. Sadly, he passed away soon afterwards. Franks grandson Vinnie Jr. is also a friend. Such a great family that changed the course of pizza as we know it and yet hardly anyone knows about their story. Norma and I have been working for years to get this story out. For me knowing how to make pizza is part of the puzzle and knowing where NY pizza came from is a very important part as well. Having the Mastro mojo on our pies is such a gift. I wouldn't trade them for a dozen pizza masters
