Struggling with new mixer

So.. needs  be and we outgrew our trusty 15kg spiral mixer and have invested in a new way 75kg 2 speed mixer. It's a lot faster than our old mixer, even on the slow speed.

Testing it out today using our same formula i've run into problems. Instad of the dough "pumkining" it is just centrifuging against the side wall.

Has anyone got any tips or pointers into what we are doing wrong?

How big is your batch? My guess is that your batch is too small for the mixer. I have a 50qt mixer. The SMALLEST batch I can make is about 6000g of flour. Any less than that and it has a hard time to come together. My batches usually run in the 10,000-16,000g(of flour) range.

So basically... what model mixer and how much flour, and water, are you using?

I was using around 24kg of flour with 60% hydration.

I worked out the issue.... after staring at the bowl whilst it was spinning around I noticed the direction of the bowl wasn't following the arrow  ::)  Which highlighted the issue was polarity related.

A quick switch of two cables in the three phase plg. Bingo, problem solved.

Thanks for you help earlier though. It had me scratching

Oh, and I was looking at that bowl for a long time before I realised!!!!!  ???
