If you're asking about food saftey, yes it's safe.
Qulaity will be up to you, I've found 24-48 hour in fridge ok but not ideal. I've found freezing is best. The fridge makes it slightly stale compared to frozen.

As soon as it cools freeze it. Even for only a day it tastes almost freshly baked.
Sounds like freezing is the way to go. It actually makes things easier to freeze it on the weekend before.
Have you considered making dough Wed, refrigerating, taking it along unbaked on your trip, then baking fresh Friday?
I have. But I need to make enough for 18 people so I was thinking at least 2 silicians. I might make a round pie while I'm there. Plus, I don't know the exact setup of the kitchen and what is there/not there.
I've got a month to figure it out.
