Tweaked the bake. Baked naked at 450 for 10 minutes. Then topped, baked another 10 and finished under broiler for 3 minutes. Probably shouldn’t have gone longer than 2 but I’ll still classify this as “char”. Probably also a bit over fermented at 72 hours. First pie is pepp and jalapeño (finished with hot honey). 2nd is homemade Italian sausage and roasted peppers.
