4-hour emergency dough. 

Flour 90% GM Better For Bread/10% Spelt
Water - 65%
Salt - 2%
LDM 2%
ADY - 0.15%

Bianco di Napoli crushed tomatoes, Saputo Premium Gold whole milk low moisture mozz and fresh mozz, Vermont smoked pepperoni, cherry tomatoes, banana peppers....and I had a little mishap applying the balsamic glaze.

The second pizza (cheese pizza) was dressed by my 5-year old daughter. 
Things have never been more like today than they are right now.

That is a nice looking pizza with the balsamic vinegar and it looks like you really used top notch ingredients to dress the pizza. Did you like the pizza despite its brief fermentation time?

Your daughter also did a nice job. You have trained her well.

I only hope all the other things I'm trying to instill in my daughter go half as well ;-D

The crust was surprisingly good.  The combination of LDM and spelt (this is the highest amount I've ever used in a blend) really worked quite well.  Here's the undercarriage.  There's a bit more rice flour than I generally end up with, but at least you can see the type of bake I got.

Focus is NY style but do others too
Preferred Flour (for NY pies) is All Trumps BB
Preferred temperature for NY is 550F, for NP 900+F
Preferred type of yeast IDY

Decided to throw down some New Jersey Boardwalk Style pizza. Family members literally inhaled the pizza in minutes.

Love this style.
Pizza is about balance, nothing more nothing less
