Need some advice about making dough vs buying dough balls
« on: June 28, 2020, 05:28:01 PM »
Hello everyone!  I am new to the group.  I own a craft beer bar that also has pizza.  Once COVID came and shut us down inside we hit pizza hard and have been having great success, now we are a pizza shop that has craft beer.   But this brings me to my question.  We used frozen dough balls originally but now that we are making so many pizzas I feel like I need to switch to possibly making our own dough.  I am currently going through about 1,600 of dough a week.  I did the math and I am thinking before labor making the dough would cost me .49 a per 24 oz dough ball.  I am currently paying 1.00 per 24 oz dough ball.  Does it makes sense to pursue this further and invest in a dough mixer?  It looks like I would need a 220 lb mixer.  I would need to do one 200lb batch a day Sunday-W, then 2 160lb batches Thursday, Friday, Saturday.  Sorry if this seems like an odd question, but like I said, we never really planned on being a full out pizza shop and I am learning as I go.  Thanks for any advice!
