43 years in restaurants, never worked a pizzeria, though I’ve always wanted to. Just didn’t work out.

Thanks for all the replies.  I will pass the #'s on.  The timing may not be right.  When we talked about this he was pretty interested but last week scored a big government contract for 6 figures so our little pan project may not happen  :'(

Great news on the pans.  My friend was in tonight for pizza and he is real excited.  I gave him a 12"x18" allied metal pan to work with.  I have a bunch but don't use them.  He thinks it will be an easy job to recreate them.  He is ordering steel Monday and will make some 12"x12" and 12"x18" prototypes for me to season and try out.  We will go from there.  I came up with a tribute to Norma and will call them the SWH (smiling with hope) Pans with her face stamped in them.  She can be our east coast distributor and we will be the west coast distributor.  It will keep her in the pizza world and hopefully make a little extra retirement $ for her and us.  If things take off she can sell them at the Pizza Expo and other trade shows.  :)

They will have to work as good as the Allied pans do with even bakes.  He was confident that they can produce one as good.

This is the fist proto type and it was a home run 🙂  We will be selling these unseasoned ( I seasoned this one 5 runs with vegie oil today and no sticking) to the home pizza community as well as to pizzerias around the country once I get the details worked out with him on production time and #'s.  These are exact duplicates of the Allied pans.

you have to make sure when you put the oil on you wipe it near all off.  excess oil will get sticky and not release pies.

veggie oil wiped on very lightly, baked for an hour at 350 cool, wipe again 350 for an hour cool, wipe again 450 for 30 minutes cool, wipe again 500 for 30 minutes cool, wipe again and continue this process at 500 until you get it dark and smooth.

2 questions- do you ever need to clean your seasoned pans - and periodically do you ever re-season them?

We lightly scrape oil and crud left in pan after each bake, with plastic scraper, and then wipe dry with paper towels.  We use one of those heat resistent plastic spatulas you use to turn pancakes and such to get pies out of pans.   I rarely have to re-season them and if I do just follow the above process at 500 degrees.
