Slow-Cooking Sauce

I've heard that cooks like to slow-cook sauce to let the garlic, herbs and spices seep in the sauce for more flavor.  Does this yield a noticeable difference?  Can this be done in a crockpot?

Also, has anyone tried the joule (A new smart-device that slowcooks items by boiling them in a pot of water inside a bag)

Most here just add those items to the sauce and let them steep under refrigeration, or do a microwave infusion where aromatics are added to oil and a short period of microwaving is done to release those flavonoids.
