Pizza Chef Salaries?

What is the range of pay for head pizza chefs?  More from the perspective of a start-up business...in one of the larger markets.  Interested in hearing established business ranges as well...  Thanks!

..most good pizza guys in the north east make 200/250 a day for a 10hr shift ..thats in a 20k a week shop
